INGREDIENTS
⦁ 4 red gold, 2 Jewel yam & 1 medium-sized batata sweet potatoes
⦁ Swiiftty-Spice Seasoning Mix
⦁ 1 organic Onion (chopped)
⦁ 1 red bell pepper (chopped)
⦁ 2 green organic onions, scallions (chopped)
⦁ Vegetable or olive oil
⦁ 2 Lb. wild-cut medium-sized peeled & deveined shell-off Shrimp
⦁ 1 1/2 cups organic Tomato sauce
⦁ Fresh organic Parsley (Chopped)
⦁ 2 Cup water
⦁ 1 cup organic Beef, chicken, or vegetable stock
⦁ Salt to taste
INSTRUCTIONS
⦁ Peel the potatoes, cut into cubes, rinse, and set aside.
⦁ Season the fresh shrimp with Swiiftty-Spice Seasoning Mix and salt, and set aside for 5 minutes.
⦁ Heat a skillet over medium-high heat, add 2tbsp of oil, pour the shrimp in, and stir for about 3 minutes on both sides until golden brown. Remove and set aside.
⦁ In the skillet, add oil, onions, scallions, red bell pepper, sprinkle a little of Swiiftty-Spice Seasoning Mix, and stir for 1 minute.
⦁ Add the cubed potatoes, 2 cups of water, 1 cup of beef stock, and salt to taste. Stir, cover, and cook over medium heat for about 5 minutes, stirring occasionally. Once potatoes are cooked, add the shrimp, stir, and let it simmer for 1 minute. Turn off the stove.
⦁ Serve and sprinkle the fresh parsley leaves. Enjoy your delicious dish!
