INGREDIENTS
⦁ Swiiftty-Spice Poultry Seasoning Blend
⦁ 1 lb. (0.4 kg) Organic chicken thighs
⦁ 14 oz can of organic whole peeled tomatoes or organic fresh tomatoes
⦁ 2 tablespoons apple cider vinegar
⦁ 2 tablespoons olive oil
⦁ 1 cup diced organic onion (1/2 onion)
⦁ 3 cloves of organic garlic, minced
⦁ 1 tablespoon organic chopped parsley for garnishing
⦁ Salt to taste
INSTRUCTIONS
⦁ Rinse the chicken thighs with water and pat dry with paper towels. Season with Swiiftty-Spice Poultry Seasoning Blend and salt on both sides of the chicken; set aside for 10 minutes. Puree the tomatoes in a food processor.
⦁ Heat the skillet over high heat. When it’s fully heated, fry the chicken thighs, skin-side down, until browned. Brown both sides of the chicken. Remove the chicken from the skillet and save the juice that seeps from it.
⦁ Turn the heat to medium and add the olive oil to the skillet. Sauté the onion and garlic, then sprinkle about a tablespoon of Swiiftty-Spice Poultry seasoning over them, let it sauté for a couple of minutes, or until the diced onion becomes soft. Add the tomato puree and stir to combine well.
⦁ Transfer the chicken and the juice into the pot, cover with its lid, and simmer over low heat for about 15-20 minutes, or until the chicken is tender. Add salt and stir to combine well. Garnish with chopped parsley and serve immediately.
