Potato porridge & Shrimp delight

A combination of Red gold, jewel Yam & Batata sweet potatoes.


INGREDIENTS


⦁ 4 red gold, 2 Jewel yam & 1 medium size batata sweet potatoes
⦁ 5 tbsp O.B.O seasoning sauce original or spices.
⦁ 1 organic Onion (chopped)
⦁ 1 red bell pepper (chopped)
⦁ 2 green organic Onions Scallion (chopped)
⦁ Vegetable or olive oil
⦁ 2 Lb wild-cut medium size peeled & deveined shell-off Shrimp
⦁ 1 1/2 Cup organic Tomato sauce
⦁ fresh organic Parsley (Chopped)
⦁ 2 Cup water
⦁ 1 cup organic Beef, chicken or vegetable stock
⦁ Salt to taste


INSTRUCTIONS


⦁ Peel the potatoes, cut into cubes, rise and set aside.
⦁ Season the fresh shrimp with 2tbsp of O.B.O seasoning sauce spicy, salt and set aside for 5 minutes.
⦁ Heat a skillet over medium-high heat, add 2tbsp of oil, pour the shrimp and stir for about 3 minutes on both sides until golden brown. Remove and set aside.
⦁ In the skillet, add oil, onions, scallion, red bell pepper, O.B.O sauce and stir for 1 minute.
⦁ Add the cube potatoes, 2 cups of water, 1 cup beef stock, salt to taste stir, cover and leave to cook on a medium heat for about 5 minutes stirring occasionally. Once potatoes are cooked add the shrimp stir and let it simmer for 1 minute. Turn off the stove.
⦁ Serve and sprinkle the fresh parsley leaves. Enjoy your delicious dish!
